Coconut Chutney



This is one of the simple chutneys which can be
made in a jiffy.My mom uses split
black chana[Porikadalai] instead of cashews. I
have tried with porikadalai and cashews. I
liked the cashew one better because it is thick
and more flavourful than the porikadalai one.


Ingredients:

Fresh Grated Coconut- 1 cup

Green chillies -2 -3
Ginger- 1 " slice
Cashews- handful

Water- 3/4 cup

For seasoning

Mustard seeds- 1tsp
Urad dal- 1tsp
Red chillies-2
Curry leaves-a few

Coconut oil-2 tsp

Salt -to taste

Method:

In a blender grind coconut,ginger,green

chillies and cashews with water in to a smooth

paste.Instead of pouring the 3/4 cup water together, start

grinding with 1/2 cup water. You can add more

water later also.


In a pan add the oil and seasonings ,when it

splutters add it to the chutney. Add salt, mix

well. Enjoy with Idli, Dosa, Upma ,Idiappam..

My coconut chutney is a little different from yours. Adding cashews makes it richer!! :)
