Rava Upma
This upma is one of traditional south Indian food and
also one of my comfort foods. This can be served for breakfast or
dinner.
Ingredients:
Rava/Sooji - 1 cup
Frozen Vegetables- 1 cup [ peas,corn,carrots,beans]
green chillies-2
1" piece ginger, minced
curry leaves- a few
salt-to taste
for seasoning
mustard seeds-1tsp
urad Dal-1tsp
coconut oil-1 tbs
Fresh grated coconut-1/2 cup
water-2 cups
Method:
Dry roast Rava until golden brown.Keep aside.
In another pan add the seasonings and when it splutters
add the Green chillies,ginger,curry leaves saute 1
minute.Now add the frozen vegetables and saute for 3-4
minutes .Add water and salt ,bring to boil.
In medium flame add the roasted rava stirring continuously
to avoid any lumps.Turn the flame to low and let the upma
cook until the water is absorbed .The rava must be soft,
fluffy and not sticky.Add the coconut and mix well.Turn
off the gas and cover and let it sit for 5-10 minutes.
Serve hot with Nellikkai arachukalakki and apple pickle.
