Koorka Upperi/Chinese Potato Fry




Koorka/Chines potatoes is one of my favourites.I haven't seen any keraliens who doesn't love Koorka. It is similar to potatoes but tastes much better. Cleaning the koorkka is a tedious process. You have to wash them first,remove the skin and cut them....When ever I clean them my hands gets stained. But it was worth all the pain. Here in US we get the frozen ones. I usually use the Wynad brand or daily Delights which you can get from any kerala stores .

Ingredients:

Cooked Frozen Chinese potatoes-2 cup

Mustard seeds-1tsp

Urad Dal-1 tsp

Red chillies-3

Coconut Oil-2 tbs

Curry leaves-a few

Red chillie powder-1 tsp [optional]

Turmeric powder-1/2 tsp

Salt-to taste



Method:

Thaw the frozen Chinese potato in the fridge

overnight or take 2 cups of the frozen Chinese

potato and put it in a strainer and pour hot

water . Drain and set aside.

In a pan add the oil,mustard seeds,urad

dal,curry leaves and red chillies,when mustard

splutters add the Chinese potatoes ,turmeric

powder ,red chillie powder and salt. Saute for

8-10 minutes in medium flame until they are

crispy on the outside.

Note: For more flavour add 1 crushed garlic clove.
Make it more crispier add more coconut oil.

potatoes sauteed in coconut oil should taste yummy! i have never tried it though.. looks very inviting :)

I have never tastd but I doubt not for the taste; frying in coconut oil tastes unique :) recalls my vacation in kerala:)

we usually drizzle some coconut oil for spicy finely chopped potato fry.. that adds a wonderful taste! This recipe is new to me.. gotta try this! Looks delicious!

That's a great recipe. Even though we cut out on using coconut oil, for some dishes its a must. We also add lentils with this....i bring them when i come back form Kerala...Its tough to clean when its raw. i have seen it in freezers but never taught of trying them. we all love it.

Oh.. ente hostel days orma varunnu,avide ennum koorkaya..Its not common in north kerala,so in my home nobody knows abt this,will buy from mallu store soon..
