Koorka Upperi/Chinese Potato Fry
Koorka/Chines potatoes is one of my favourites.I haven't seen any keraliens who doesn't love Koorka. It is similar to potatoes but tastes much better. Cleaning the koorkka is a tedious process. You have to wash them first, remove the skin and cut them....When ever I clean them my hands gets stained. But it was worth all the pain. Here in US we get the frozen ones. I usually use the Wynad brand or daily Delights which you can get from any kerala stores .
Ingredients:
Cooked Frozen Chinese potatoes-2 cup
Mustard seeds-1tsp
Urad Dal-1 tsp
Red chillies-3
Coconut Oil-2 tbs
Curry leaves-a few
Red chillie powder-1 tsp [optional]
Turmeric powder-1/2 tsp
Salt-to taste
Method:
Thaw the frozen Chinese potato in the fridge
overnight or take 2 cups of the frozen Chinese
potato and put it in a strainer and pour hot
water . Drain and set aside.
In a pan add the oil,mustard seeds,urad
dal, curry leaves and red chillies, when mustard
splutters add the Chinese potatoes ,turmeric
powder ,red chillie powder and salt. Saute for
8-10 minutes in medium flame until they are
crispy on the outside.
Note: For more flavour add 1 crushed garlic clove.
Make it more crispier add more coconut oil.
