Quinoa Pilaf




Today I tried Quinoa Pilaf,first time in my life and it tasted pretty good.So thought of sharing the recipe with all my friends.This recipe is something similar to my "Brown Rice Pilaf"

Some information's about Quinoa

Quinoa is similar to couscous ,but more tasty
and nourishing. The quinoa seed is high in
protein, calcium and iron, a relatively good
source of vitamin E and several of the B
vitamins.Quinos is a seed of a leafy plant
which is also a relative of spinach,Swiss chard
and beetroot. Also the name "Quinoa" name comes
from the Greek words, Chen (a goose) and pous
(a foot).


Ingredients

Quinoa-1 cup

Veg stock-2 cups

Carrot-1 chopped

Onion-1 chopped

Tomato-1 chopped

Bell pepper-1 red/green or yellow chopped

Frozen peas-1/2 cup

Garlic-3 cloves

Fresh rosemary- a little[optional]

Pasta seasoning blend-1 tsp[I used the trader

Joe's brand]

Olive oil-2 tbs

Salt-to taste

Method:

Rinse the Quinoa in hot water 3-4 times or

until the rinse water is pretty clear.Drain and

set aside.


Heat olive oil in a large skillet over

medium-high heat. Add onion and cook until

soft, 3 minutes. Add garlic,and tomatoes. Saute

3 more minutes.Add carrots and bell

pepper,frozen peas cooking until soft, about 5

minutes. Add quinoa ,pasta

seasoning,salt,rosemary and veg broth. Bring to

a boil over high heat, then reduce heat to

medium-low. Simmer, covered, 20 minutes or

until water is absorbed. Fluff with a fork and

enjoy.

i have not tried quinoa..each and every time i go to WHFoods,i think of searcg for it..will do it sometime soon

I love quinoa! I've just recently started eating it, it's such a nutritious side dish. I like all the veggies you added, making it even healthier :).
