Fried Rice In Pineapple


This is one of my favourite rice. This rice is very tasty and looks very impressive in a Pineapple boat. One of the easy recipes to impress your guests.This recipe is from a book named" Vegetarian".

Ingredients:

Pineapple-1 large

Sunflower oil-1 tbs

Garlic cloves crushed-1

Small onion-1,diced

Celery stalk-1/2 sliced

Coriander seeds-1 tsp ground

Cumin seeds-1 tsp ground

Mushrooms-1/2 cup sliced

Cooked rice-1 cup[ I used jasmine rice]

Soy sauce-2 tbs

Sugar-1/2 tsp

Salt-1/2 tsp or more

Cashews-1/4 cup

To garnish

Spring onion-1 sliced finely
Fresh coriander leaves

Method:

Cook the rice and Set aside.

Cut the pineapple in half lengthwise and scoop

out the flesh to make 2 boat shaped shells.Cut

the flesh into cubes and reserve 1/2 cup for this recipe.

Heat oil in a wok.Add garlic,onion,celery and

cook over high heat for 2 minutes.

Stir in the corriander and cumin and

mushrooms. Add the pineapple cubes and cooked

rice and stir well. Stir in the soy sauce,sugar

,salt and cashews.

Using 2 spoons ,lift and stir the rice for

about 4 minutes,until the rice is thoroughly

heated.[So the rice won't be mushy].

Spoon in the rice mixture into the pineapple

boats. Garnish with spring onions and

coriander leaves. Serve immediately.

rajee-this is something similar to thai fried rice
