Mexican Rice
We have retreats at our temple SAT. It is a 3 day retreat and some of my friends and I volunteer to cook for these retreats. This month we had a retreat and our friend Sasvati cooked this rice. It was very delicious. I asked her for the recipe right away! I was amazed how easy this rice is to make. My son is a huge fan of Mexican food and he liked this rice very much. Hopefully we can save some trips to taco bell:) This rice can be served with beans and sour cream .
Ingredients:
Basmati Rice- 1 cup
vegetable stock-1 1/2 cup
Enchilada Sauce-1/2 cup [you can get it from any store in the Mexican food aisle]
Salt-to taste
To Garnish:
Spring onion-2 thinly chopped
Cilantro/coriander leaves-1/2 cup chopped
Method:
Soak the rice for 15 minutes. Drain and seat aside.
In a pan [with lid] add the vegetable stock,enchilada sauce,salt and rice. Stir and bring it to boil.Now put the lid and on low flame cook the rice until done.Fluff the rice with a fork.
Garnish with chopped cilantro and spring onion. Serve hot with Sour cream.
Note: To make the rice colorful you can also add red,yellow and green bell pepper,onions etc..Saute it in a Little bit of oil before adding it to the rice.
