Tofu Kothipori




"Kothipori" is a Malayalam word which means
"scrambled eggs".Kothipori is made with eggs,onion,
tomatoes and spices and is served on the road side
shops during night time. Today i saw a site
where the kothipori was made with porathas hmm...
sounds interesting .So i thought why not try with
tofu? Well i tired with tofu and came out good.
It looked like the kothipori that is made in
kerala but only difference is there is no egg
in it.


Ingredients

Firm Tofu- 1 container [140z]

shallots- 1/2 cup chopped

tomatoes-2

green chillies-2 thinly chopped

ginger-1 tsp thinly chopped

turmeric powder-1/2tsp

black pepper powder-1tsp[optional]

salt-to taste

coriander leaves-2 tbs chopped

vegetable oil-2 tsp

Method:

Squeeze the tofu and remove the water and

crumble in to small pieces .keep aside.

In a pan add oil and chopped shallots,ginger

and green chillies. When onion is translucent

add the tomatoes and saute until it is soft.Add

the scrambled tofu,turmeric powder and salt.

Saute until tofu is cooked and the water is

absorbed .Add black pepper powder and coriander

leaves. Remove from flame.This dish can be

served as a breakfast item.

Great idea of making tofu as egg alternative. For scrambled egg, I do the same except adding ginger. I'll try it. I am sure tofu kothipori tastes so good.

Thanks you Rajee and homecooked. This is like egg bhurji only but without eggs. Good alternative for vegetarians.
