vegetable Cutlet



I haven't made cutlet for a long time because
when ever i try to deep fry these patties, it
would crumble in to pieces:(. Then heard some
where that you don't have to deep fry them you
can cook on a non stick pan [Dosa kallu] .
So thought would give it a try and if it is
still a disaster bye bye to cutlets.I tried it
today and it turned out pretty good. I am glad
that i found a perfect way to cook these patties
because cutlet is my son's favourites.


Ingredients:

Potatoes- 3 peeled and chopped

frozen vegetables -1 cup

Shallots-3-4 chopped

green chillies-2-3 chopped

ginger-1tsp thinly chopped

garam masala - 1/2 tsp

turmeric powder-1/2 tsp

salt- to taste

flour-1/4 cup
water-8 tbs

bread crumbs-1 cup

coriander leaves-2 tbs chopped

oil/butter-2 tsp ,more for cooking the patties.

Method:

Cook frozen vegetables and potatoes in

microwave or pressure cooker.Mash them well and

keep aside.

In a pan add oil ,chopped shallots,ginger,green

chillies and saute until raw smell of shallots

disappears.Add the mashed vegetables,garam

masala,turmeric powder,salt and coriander

leaves , mix well. Let it cool.

In a bowl add the flour and water and make a paste to dip

the patties.

When the vegetables mix is cool to the touch

make round patties and dip them in the flour

mix and coat them with bread crumbs.Cook the

cutlets in a non stick pan with a little bit of

oil/butter. Cook both sides until they are golden

brown.Serve hot with tomato ketchup.

Note: if you are out of bread crumbs, toast the

bread in a toaster and grind it in a blender.

Nice tip Dhanya! I tried deep-frying only once and it was a disaster... You r giving me hope! :)

thanks for the recipe. I used SPROUTED 100% whole grain flour (that digests as a vegetable) instead and sprouted flour bread and it was delicious.
