Today i went to my friends house and came to know that tommorrow is Karthikai celebration and i had to make some prasad for nivedhya.For karthikai in india my mon used to make pori and Appam. I tried appam and it was so hard that we could hurt our teeth:).So No to appam .The next will be pori,which unfortunately i didn't have in my pantry today. So thought will make kesari for nevedhya and share the recipe with you all.
Ghee- 3/4 cup
water - 2cups
Saffron - a pinch
Cashews and raisin - 1/4 cup each.
cardomom powder - 1/2 tsp
Food colouring - i used orange food colouring.2-3 drops
Boil the water and add the food colouring and saffron . Set aside.
In a pan add 2 tbs of ghee and fry the cashew and raisin .Now add the suji and fry until golden in colour .Add half of ghee.and boiled water and mix continously until the suji is cooked and water is absorbed. If there is any lumps crush them with a laddle.Add the sugar and the remaining ghee stir until the kesari leaves the side of the pan.
