Pumpkin Payasam



Pumpkin Payasam

I had some leftover pumpkin puree from the pumpkin pie. So thought of making something out of the box and tried pumpkin payasam. . Beleive it or not it turned out great and the taste was pretty good. It is a mixed flavour of pazha pradhaman[banana payasam] and chakka prathaman[jackfruit payasam].

Pumpkin Puree - 1 1/2 cups
Sugar - 1/2cup
Coconut milk - 1 3/4cup
Water - 1 cup
Cardamom - 5 pods crushed
Saffron - a pinch

Butter - 1tbs
cashews and Raisins - total 1/4cup

Method:

Fry the cashew and raisins until they are crispy .

In a pan add the pumpkin puree,sugar and water let it cook until sugar is dissolved and mix starts to boil .Now add the coconut milk and simmer it for 10 miniutes. Add the cardamom and saffron.In medium heat bring the payasam to Boil. Remove from flame and add the fried cashews and raisins.
