Mixed Vegetable Sambar
Mixed Vegetable Sambar
This is one of my favourite recipe. My grandma taught me how to make this Sambhar.
This sambar is made with paste made of fresh coconut and spices which makes it very delicious compared to the sambahr powder one. It is a littlebit time consuming but worth it.
Sambar
Ingredients:
Carrot - 1 medium chopped
potato - 2 medium peeled and cut in to chunks
Pumpkin - 1 cup cut into chunks
Eggplant - 2 small ones cut in to chunks
tamarind water -3cups
Toor dal - 1/2 cup cooked
To make a paste:
Fresh grated coconut - 1/2cup
Corriander seeds - 2tbs
Redchillies -3
Fenugreek seeds - 1/2tsp
Hing - 2 pinches
turmeric powder - 1/2tsp
Salt - to taste
For seasoning
Mustard seeds - 1tsp
red chillies -2
curryleaves - 7-8
coconut oil - 2 tsp
corriander leaves - to garnish
Method:
Soak a golf ball size tamarind in 3 cups of luke warm water. Make tamarind juice and strain it.
Cut all the vegetables and add this to the tamarind water with turmeric and cook until vegetables are soft.
Add dal and salt.
In a pan add the coconut,coriander,fenugreek,chillies and dry roast it until coconut are light brown. Grind it into a smooth paste with enough water.
Add the paste to the cooked vegetables and let it boil for 5 miniutes in medium flame.
Add the hing and the corriander leaves.Remove from the flame.
In a pan add the oil and mustard seeds,chillies,curry leaves and let it splutter. Add this to the sambar.
Serve with rice,dosai,idli......
