Beans thoran is one of the easiest and simple recipes and healthy too.If you just started experimenting with food this is one recipe you should try. The fresh coconut and the coconut oil gives it a nice flavour and aroma .
Green Beans- 2 cups thinly chopped
fresh grated coconut - 1/3 cup
mustard seeds - 1tsp
urad Dal - 1tsp
red chillies -3
curry leaves - 6-8
coconut oil - 2 tsp
In a pan add the oil and seasoning, let it splutter now add the beans and cook on low heat while stirring every 3-4 minutes. .If the beans is sticking to the pan add 1-2 tbs of water.
Cook covered till the beans are cooked well but not mushy.
Sprinkle coconut and mix well.
