Stir Fried Noodles with Vegetables
When This veggie noodles are so easy to make and tastes delicious and also looks colorful. Also one advantage about these noodles are I don't have to force feed my son coz he loves it.
Ingredients:
Vegetarian Noodles[Mi Chay]14 oz- Cooked
Carrots-2 julienne cut
Bell pepper-1julienne cut
Spring Onion-2
Shallots-4 thinly sliced
Garlic-2 cloves crushed
Soy Sauce-1 1/2 tbs
Chilli Paste-1 tbs
Rice Vinegar-1/2 tsp
Sesame oil-1 tbs
Salt-to taste
Method:
In a pot of boiling water cook the Noodles with a pinch of salt. Drain and set aside. To make sure the Noodles are not sticking together I pour cold water on the noodles and let it drain.
In a Hot Wok add the oil and garlic and saute for a minute.Add the shallots,carrots and bell pepper.Saute for 2-3 minutes,add the Soy sauce,chillie paste,rice vinegar,salt and saute for a minute. Add the Cooked Noodles and mix well. Garnish with sliced spring onions.Serve hot with Tomato ketchup.
Variations-Add fried tofu,snow peas ,beans sprouts to make it more healthy.
