Chakka Pazha Koottu/Ripe Jackfruit Curry
This is one of my favourite Ripe jack fruit curries. This curry is sweet and spicy at the same time.Similar to the pineapple pachadi. I used frozen jackfruit coz fresh is not available here.
Ingredients:
Ripe Jack fruit- 1 cup chopped
Turmeric-1/4 tsp
Chilli powder-1/2 tsp
To make a paste
Grated Fresh Coconut-1/2 cup
Green chillies-2
Cumin seeds-1/2 tsp
For seasoning:
Mustard seeds- 1/2 tsp
Red chillies-2
Curry leaves- a few
Coconut Oil-2 tsp
Salt-to taste
Method:
In a pan add the diced jack fruit with turmeric, salt, red chillie powder and 1/2 cup water.Cook for 10 minutes.
Grind to gether the coconut, green chillies and cumin in to a smooth paste with enough water. Add this to the cooked jackfruit and bring to a boil.
In a pan add the seasoning, when mustard seeds splutters add this to the jackfruit curry. Enjoy with Rice.
