This is one of the simplest Halwa to make.This is one of my favourites. I luv the color of the halwa and also adding Nuts and raisins makes it extra special.This recipe is from one of my friend .
Grated Carrots-3 cups
Milk- 1 1/2 cups
Sugar- 1 1/2 cups
Ghee- 2 tbs + 1 tbs
Cardamom Powder-1/4 tsp
Chopped Almonds-2 tbs
In a heavy pan with thick bottom add milk and the grated carrots . Cook until carrots are soft and milk is absorbed, stirring occasionally. . Mix in the Sugar and keep stirring on medium flame. When all the moisture is absorbed add 1 tbs of ghee and cardamom powder.
In another pan add 1 tbs of ghee and chopped cashews,Almonds and raisin. Fry it for few minutes.Set Aside.
When halwa started to thicken add the remaining 1 tbs ghee and the fried nuts,raisin mixture. Mix well. Remove from the flame and garnish with more Almonds.
