Semiya /Vermicili Upma



Like Rava Upma this one is also one of my comfort foods. Readymade Roasted vermicelli's and Frozen Vegetables makes this dish less time consuming yet delicious.

Ingredients:

Vermicelli/Semiya-1 cup Roasted

Frozen vegetables - 1

Cup[carrots,peas,beans,cron]

Water- 1 1/2 cup

For seasoning

Mustard seeds-1tsp
Urad Dal-1 tsp
Red chillies-2
Green chillies-2

Coconut oil-2tsp

Curry leaves- a few

Fresh grated coconut-1/2 cup

Salt- to taste

Cashews-1/2 cup to garnish

Method:

Dry Roast the semiya until golden brown.Set

Aside.

In a pan add oil,mustard seeds,urad

dal,red chillies,green chillies and curry

leaves.When mustard seeds splutters add the

frozen Vegetables and saute for 3-4 minutes in

medium Flame.

Add the water and salt and on high heat bring

it to a rolling boil.When the water boils

reduce heat to low and add the roasted

Vermicelli/semiya and stir occasionally until

all the water is absorbed and Vermicelli/Semiya

is cooked. Add the Grated coconut and Cashews.

Remove from Flame and Cover the Upma with a lid .

Let it sit 10 -15 minutes.

Serve hot with coconut chutney.

Note-You can also use 1 cup of Fresh Vegetables

if you prefer.

I used the readymade Roasted Vermicelli from Indian store.
