Pineapple Pachadi
Last week I was going crazy for pineapples.Don't know why. I made pineapple rice,pineapple pachadi and also pineapple jam.heheee...
This pachadi is one of the Authentic kerala sadhya recipes. It is sweet and spicy at the same time. If you luv pineapple you have to try this recipe.This pachadi goes well with Rice.Will upload the jam recipe soon.
Ingredients:
Pineapple chunks-20 oz can[You can also use fresh pineapples]
Sugar-1/4 cup
Water-1 cup
To grind:
Fresh grated coconut-3/4 cup
Green chillies-3-4
Mustard seeds-1/4tsp
Buttermilk-1/2 cup
Coconut milk- 1 cup [Thick]
Red chillie powder-1 tsp
Turmeric-1/2tsp
Rice flour-1 tsp[to make a paste]
Salt-to taste
Seasoning:
Mustard seeds- 1 tsp
Red chillies-3
Curry leaves - a few
Coconut oil-1tbs
Method:
Drain the juice from the pineapple and cook the
pineapple chunks with sugar and water until it
is soft.
Grind together coconut,green chillies,mustard
seeds and buttermilk to a smooth paste. If it
is too thick add 2 tbs of water when grinding.
Add the paste,turmeric powder,salt,red chillie
powder to the cooked pineapple.
Add water to 1 tsp of rice flour and make a
thick paste.Add this to the pachadi.Pachadi
will be thick if you add the rice flour paste.
When the mix is coming to a boil add the
coconut milk. Mix well. Let it boil for 2-3
minutes. Remove from the flame.
In a pan add the oil,mustard seeds,redchillies
and curry leaves. When mustard seeds splutters
add this to the Pachadi. Serve hot with Rice.
