Mango Achar/ Pickle
When mangoes are in season my grandma used to
make this pickle. She would make a batch of
mango pickle and it will be finished that day
itself.It was so yummy.we used to have this pickle
with Curd Rice.
Ingredients:
Mango - 1 1/2 cups thinly chopped
Red chilli powder - 3 tbs
Mustard seeds-1 tsp
Fenugreek-1/4 tsp
Hing- 1/4 tsp
Sesame Oil- 2/3 cup
Salt-to taste
Method
In a pan , add the mustard seeds,fenugreek
seeds,hing and Sesame oil. When the mustard
seed splutters remove from flame and let it
cool.
Meanwhile Chop the mangoes and mix it with red
chilli powder and salt. Mix well.
Add the sesame oil mix to the mangoes and mix
well. Let it sit 2-3 hours before serving.
Refrigerate the remaining mango pickle.
Note:
If you like it very hot you can add more red
chilli powder.
If you are health conscious reduce the amount of
sesame oil to 1/3 cup.

Yummmy...I love pickles....my mom makes similar version...they taste great with curd rice and dal.
I'm always a mango fan! My taste buds producing a lot of liquid just to see your pictures! ha ha!! So inviting!! :)
