Carrot and Cashew Coleslaw



This is one of my favourite salads. The recipe is adapted from a book called " Vegetarian". Salad dressing is made with sesame oil and poppy seeds which is an unusual flavour for salads ,but they go very well together with a nice aroma and flavour.

Ingredients:

carrot- 1 grated

Small onion-1 chopped

Celery stalks-2 thinly chopped

Cabbage-1/4 small shredded [ 3 cups]

Fresh parsley/coriander leaves-1 tbs

sesame oil-4 tbs

black poppy seeds-1/2 tsp

cashews-3/4 cups toasted

white wine/apple cider vinegar-2 tbs

lemon juice - juice of half lemon[optional]

salt and pepper-to taste

Chopped parsley/coriander leaves to garnish

Method:

In a large salad bowl ,mix together

carrot,onion,celery and cabbage.Stir in chopped

parsley/coriander and season with salt and

pepper.

Heat sesame oil in a pan with a lid. Add the

poppy seeds and cover the pan.Cook over medium

heat until seeds start to make popping

sounds.Remove from heat and let it cool.
add the vinegar,oil and lemon juice to the

poppy seed.Mix well and pour over the carrot

mix.Add the cashew and garnish with parsley.

serve immediately.

Note-The recipe calls for chopped parsley,i

used coriander leaves.
