Avial-Kerala Style




This is one of the Authentic Kerala Sadhya
recipes. Avial can be made thick or Soupy. This
version is the thicker version. So if you want
it more curry like add more water.


Ingredients:

Plantain/Raw Banana/Kaya- 1

Beans-10-15

Carrots-1

Winter Melon/Elavan-1 cup chopped

Frozen /Fresh Drum Sticks/Murinaghakaya-10 cut

Frozen Yam/Chena-1/2 cup Cut

Raw Mango- half mango chopped

To Make a Paste:

Fresh Grated Coconut-1 cup
Cumin seeds-1tsp
Green chillies-3
Thick Yogurt-1/2 cup

Turmeric powder- 1/2 tsp

Salt-to taste

coconut oil-2 tbs

Curry leaves- a few

Method:

Cut the vegetables like for french fries.

In a large pan add the vegetables except, the

drumsticks and yam with 2 cups of water. Put

the lid and cook in medium flame stirring

occasionally until the vegetables are soft

but not mushy.

In a separate bowl cook the drumsticks and

yam.The reason why you have to cook these

vegetables separately is because it takes longer

time to cook.

Blend together the coconut,cumin,green chillies

and yogurt to a smooth paste. If the paste is

too thick add 1/2 cup water .Set aside.

When the vegetables are cooking add the coconut

paste,turmeric,salt,curry leaves and mix

well.In medium flame bring Avial to boil. Remove

from flame and add the coconut oil. Mix well.

Enjoy.

Note : You can also add vegetables like Long Beans,Pumpkin,Snake gourd,Yellow cucumber[vellarikkai}.

Priya you can have avial with Roti.To jazz it up a little you can add 1-2 cloves of garlic and onion. In some parts of kerala people add onion and garlic to their Avial.
