Sweet and Spicy Tomato Curry




This is one of the simple recipes which can be made in a

jiffy . This curry is sweet and spicy at the same time.

Sweetness is from the jaggery and the spiciness is from

the rasam powder.

Ingredients:

Tomato-2 large chopped

Capsicum- 1 large chopped

onion-1 chopped

water-3/4 cups

turmeric powder-1/2 tsp

rasam powder-1 tsp or more

Jaggery powdered-2 tbs

green chillies -2

For seasoning

mustard seeds-1tsp

urad dal-1tsp

red chillies-2

coconut oil - 1 tbs

Salt-to taste

coriander leaves- 2 tbs chopped

Method;

In a pan add the oil and seasoning ,when mustard seeds

splutters add the onion , capsicum and green chillies.

Saute until the raw smell of onion disappears 3-4

minutes. Add the tomato and saute for 2 minutes. Add the

turmeric,rasam powder,salt and the water. Let it cook in

medium flame until the mixture come to a boil and is

thick.Add the powdered jaggery and mix well. Remove from

the flame and garnish with coriander leaves.

Goes well with chapatti's,dosa,rice...
