Pav Bhaji



This is one of the simple recipes . Pav Bhaji is one way to sneak some vegetables on kids meals. My son loves breads but not vegetables.So i mash the vegetables very well so he can't identify any vegetables and spread it like jam on the pav.And this trick is been working for me :)

Ingredients:

Mixed vegetables-[carrot,green beans,capsicum,Cauliflower]-4cups chopped

Potatoes-3 cut into cubes

Frozen Peas-3/4cup

Onion-1 large thinly chopped

Tomato-2 chopped

Butter-2tbs

garlic-2 cloves thinly chopped[optional]

pav bhaji masala-2tbs

salt-to taste

Cilantro-3tbs chopped

To Garnish

Cilantro,Shallots,lime.

Method:

Boil the vegetables and potatoes .Mash the cooked vegetables.Set aside.[I pressure cook the vegetables with water for 1 whistle.And drain the water and mash it].

In a pan on medium flame add the butter ,chopped onion,garlic and saute until onion is translucent.Add the chopped tomatoes and saute until tomatoes are soft. Add the mashed vegetables, pav bhaji masala,salt and mix well.Mash all the vegetables with a wooden spoon.Bhaji should be thick and not runny.Remove from the flame , add the cilantro and mix well.

For the Pav

Cut the pav in half and brush some butter on the pav ,butter brushed side down cook pav until it is golden brown.

Enjoy Pav Bhaji with lemon,chopped shallots and cilantro.
