Brown Rice Pilaf



Brown rice is enriched with fiber and nutrients .This is one of the simple recipes that you can make with brown rice.

Ingredients:

Long grain Brown rice - 1 cup

Water/ Broth - 2 cups

Shallots-4 large thinly sliced

Red bell pepper-1 chopped

Tomatoes-2 chopped

Zucchini-1 chopped

garlic clove-2 thinly chopped

pasta seasoning - 2 tsp[ or use a blend of

dried basil,rosemary,thyme and marjoram]

Olive oil-2 tbs

Method:

Wash the rice. Combine rice,water and 1 tsp oil

in a pot with tight fitting lid. Bring to

boil.Stir once.Cover with lid.Reduce heat to

simmer and cook 50 minutes. Remove from heat

,let stand in covered pot for 10 minutes.Fluff

with fork .Set aside.

In a pan add olive oil ,shallots and garlic.

saute until shallots are translucent.Add the

tomatoes and saute for 2-3 minutes. Add the

chopped vegetables, seasoning and salt. Saute

until tender crisp.Now add the rice and mix

well. Serve hot.

i always wanted to try brown rice but couldn't get smaller pack from grocery store so still holding on to give it a try..

Polao looks too good ..making me hungry..
