Gooseberry/Nellikai/Amla pickle



Gooseberry fruit is rich with antioxidants and also has protein, carbohydrate, fibre, minerals and vitamins.

This is one of my all time favourites.I use frozen gooseberries because it is hard to get the fresh one in US.It works well.

Ingredients:

Frozen Gooseberry - 15

mustard seeds-1tsp
red chillies-3
curry leaves-6-8

sesame oil-1/3cup

chillie powder-2tbs

Salt- 1 tsp [you can add more to taste]
Hing-little

Method:

Thaw the frozen Gooseberries for 30 minutes. Cook the berries with water until it is soft.Drain the water and spread the gooseberries on a paper towel to air dry.Remove the seeds from the berries .Set the berries aside.

In a pan add Oil,mustard seeds,red chillies,curry leaves and hing.When mustard seeds splutters remove from flame .Let it cool for 10 minutes. Add the Gooseberries and chillie powder and salt. Mix well.

Pour it into a glass jar and let it sit in room temperature overnight so the gooseberries can absorb the oil and spices.
