Chinese Fried Rice



I have tried different ways to make veg fried rice. This is the one rice which everybody in my family enjoy's.This is an Indian Chinese variety.

Ingredients:

Basmati Rice - 1 cup

water - 1 1/2 cups

Vegetables:

Carrots,cabbage,red and yellow capsicum - 2 cups total thinly chopped[ i used a vegetable chopper to slice the veggies pretty thin]

onion-1 small thinly chopped

spring onion - 2 thinly chopped

garlic - 2 cloves thinly chopped

Soy sauce- 1tbs

chiilie garlic sauce - 1tsp

sesame oil - 1 tbs

butter -1tbs

salt - to taste

method:

Soak rice in hot water for 30 minutes.

In a wok add 1 tbs butter and the rice and fry it for 5-7 minutes or until they
are not sticking together.In a pan add 1 1/2 cup water and the fried rice and put the lid and cook in medium flame until the rice absorbs all the water and is cooked.With a fork make the rice fluffy.

In a wok add sesame oil , garlic and onion saute 3-4 minutes ,
add the vegetables and soy sauce and chillie garlic sauce and stir fry for couple of minutes in medium flame until crisp-tender.
Now add the rice and mix well. Garnish with green onions.
