Biriyani with Coconut Milk



Biriyani with Coconut Milk

This Biriyani is simple and easy to make.The interesting thing about this Biriyani is that it is made with a mix of coconut milk and water. The coconut milk gives this rice a wonderful flavour and aroma.

Basmati rice - 1 cup

Beans-1/2 cup
carrot-1 large
Onion-1 large
peas-1/2cup

Cardamom-3 pods
cinnamon-1 stick
Cloves-5
Saunf-1tsp
Star Anise-2

Garlic-2cloves

green chillies-2 split in half

Coconut Milk-1 1/4cup
Water -3/4 cup [total 2 cups of water and coconut milk mix]

Salt-to taste

Coriander leaves-2 tbs chopped

Butter -1 tbs

Method:

In a pan add butter and spices saute for 1 minute.Add the garlic and onion and green chillies saute for 3-4 minutes add the vegetables and saute for 5 more minutes in medium flame.

Soak the rice for 15 minutes.

In a rice cooker add the rice and vegetable mix with 2 cups of coconut milk ,water and salt.

Mix well and cover it and cook. When the rice is done garnish with coriander leaves
