Vegetable Stew

Mixed Vegetable Stew

This stew is something similar to potato stew. The coconut milk gives it nice flavour and aroma.


Carrot - 1 large
Beans - 1/2 cup sliced 1 " long pieces
Potato - 1 large peeled and cut into cubes
Frozen Green peas - 1/4cup
Onion - 1 large [optional]

Green chillies - 2 split into half
Ginger - 1tsp thinly sliced

coconut oil - 2tsp
coconut milk - 10oz
curry leaves - 7-8 nos

Salt - to taste


cook all the vegetables together with green chillies and ginger with enough water.Drain the water and add the coconut milk and salt.
Bring it to boil.Now add the curry leaves and coconut oil and remove from the flame.
Goes well with Appam.
