Mango Jam

Last year i tried to make orange marmalade for
the first time and guess what i messed up with
the recipe and end up with 3 jars of marmalade. I am
not sure what i did wrong but the marmalade was
a little bit bitter. So i decided to give up
making jam. But my husband was encouraging me
to try again and see how it will turn out. He
loves mango jam and wanted me to try mango jam
jam. So i though OK i will give it a try.Yoooo hooo
it was a success. The mango jam was so
yummy with homemade carrot walnut bread.. I just
followed the instruction i got
from the Sure Jell Fruit Pectin packet. Here is the
recipe.Believe me it is not that hard to make .

Ingredients:

Mango pulp- 3 cups[i used the Indian brand]

Lemon juice-1/4 cup

Sugar-5 cups

Sure Jell Fruit Pectin-1 packet [ i got it from Walmart]

Method:

In a large sauce pan add the mango pulp and lemon

juice .Mix well.

Stir 1 box of pectin in some water and make a

paste. If you add the powder directly to the

fruit mix you will end up with a lot of lumps.

Add the pectin mixture to the mango pulp and on

high heat , bring the mixture to full rolling

boil stirring constantly..[Rolling boil means

-a boil that doesn't stop bubbling when

stirred].

Stir in the sugar quickly. Return to full

rolling boil exactly 1 minute,stirring

constantly.

Remove from the heat.Skim off any foam.

Pour this in to jars filling within 1/8 inch of

tops. Cover with the lids.

Here is the step by step instructions on "How to Can the jams".
