Kaalan



This is one of the authentic kerala sadhya recipes. This curry is made with raw banana and yams.To get the best results i pulse the buttermilk in a blender for couple of seconds.Kaalan can be made thick or thinner. For sadhyas
usually it is made thicker.

Ingredients:

Raw Banana[kaya]- 1 cup chopped

Frozen yam (chena) - 1 cup, cubed

Water-1 1/2 cup

To make a paste:
Coconut - 1 cup
Cumin seeds-1tsp
Green chillies - 2 to 3

Pepper powder - 1/2 tsp

Turmeric powder - 1 tsp

Fenugreek powder (uluva) - 1 tsp

To seasoning:
Dried red chillies - 2
Coconut Oil - 1 tbsp
Mustard seeds - 1 tsp
Curry leaves - a few

Butter milk- 2cups lightly beaten to remove lumps

Method:

In a pan add the cut raw banana,frozen yam and 1 1/2 cup water cook until a

fork inserted comes out easily.Make sure the vegetables are not mushy.

Drain the excess water from the vegetables if there is any.Add salt ,

pepper and turmeric .

Meanwhile, grind coconut ,cumin seeds and green chillies with a little bit of

buttermilk.In lower flame add the ground coconut mix and beaten

butter milk.Stir continuously until the Kaalan is thick in

consistency.it takes 20-25 miniutes. You can make it thinner

if you prefer.Add the fenugreek powder and remove from the flame.

In another pan add the oil and seasoning and curry leaves. When it

splutters add to the Kaalan.Goes very well with Rice and Yogurt.
