Crunchy Carrot Pickle



Crunchy Carrot Pickle

This pickle is very crunchy and easy to make.My aunt used to make it when she visits us. The lemon juice in this pickle makes it extra special.

Carrots - 1 cup peeled and cut into thin slices [1 large carrot]

green chillies -2 thinly sliced

For Seasoning
Mustard seeds - 1tsp
Urad Dal-1tsp
Red chillies -2
curry leaves - few

Oil-1tsp

lemon juice - 2tbs

Salt - to taste

Method

Thinly slice the carrot and green chillies. In a pan add the oil , mustard seeds,dal,red chillies and curry leaves.When it splutters add it to the sliced carrots.Add salt and lemon juice and mix well.
Add lemon juice to taste.Goes well with rice and curry.
