This is one of my favorite recipes.
Basmati rice - 1 cup
Water - 2 cups
Salt - to taste
Coriander leaves (Cilantro) - 2 tbs
cashews for garnishing.
Lemon juice - 1 or 2 tbs depending on the desired tartness.
Turmeric powder - 1/2 tsp
Gingely oil (sesame oil) - 2 tbs
mustard seeds - 1 tsp
Chana dal - 2tbs
Red chillies - 2
Green chillies - 2 or 3
Ginger - 1tsp chopped
Peanut - 1/4 cup
Cook the rice with water and salt.
In a pan add gingely oil, mustard, chana dal, peanut, red chillies and saute until the peanut turns brown. Add ginger, green chillies, turmeric and saute for a
miniute. . Remove form flame and mix this with the cooked rice. Add lemon juice, coriander leaves and cashews.
Serve hot with Yogurt/buttermilk, Pickle and Pappadam.
